Sausage and Peppers, gluten free recipe

When we realized my husband had a gluten intolerance I scrambled to find simple gluten free recipes that would feed the whole family. This is my favorite feed everybody gluten free recipe. Most sausage is gluten free but be sure to check the label.

Ingredients for sausage and peppers gluten free recipe

  • Italian sausage of your choice (check the label to make sure it’s gluten free)
  • 2 tbsp of olive oil
  • 2 bell peppers (your choice of color, I like to do different colors) chopped into 1 inch squares
  • 1 onion, cut into strips
  • 1 can of diced tomatoes
  • Italian seasoning
  • Parmesan

Instructions

  1. Heat 1 tbsp of oil in large pan
  2. Add sausage and brown all sides. I believe this is what makes my sausage and peppers better than everyone else’s. Browning the sausage first makes them so tasty!
  3. Once the sausage are browned remove from pan.
  4. Add second tbsp of oil, then add in peppers and onion, sprinkle with Italian seasoning and cook until soft and slightly browned, about 10 minutes. Stirring occasionally.
  5. Then add in diced tomatoes, have heat on med/high
  6. While that all cooks, slice sausage and then add them back to the pan
  7. Stir everything together, then cover and reduce heat.
  8. Let it cook until everything is soft and sausage is cooked all the way through. About 25 minutes
  9. Sprinkle with some parmesan

To keep this gluten free serve with rice.

This recipe is great for a meal but also really good for party food too! Make a whole tray of this and then your gluten intolerant guests have something to eat without a worry. Plus it’s delicious enough that everyone will enjoy it. Another great thing about this dish is that you can make it ahead of time. Store it in the fridge until you need it or you could even freeze it!
