Pulled Chicken in the CrockPot, Gluten Free Recipe

Pulled chicken in the crock pot is a recipe I’ve made variations of for years! It’s a staple for my husband and I. So when we realized he needed to go gluten free I was happy to know that we could keep eating this as often as we like. It quickly shot to the top of my crockpot gluten free recipe list. Ingredients for pulled chicken crockpot gluten free recipe

  • 2 Chicken Breasts
  • Onion, chopped
  • Can of salsa of your choice
  • 1 cup of chicken broth

Steps for crockpot gluten free pulled chicken

  1. Place chopped onion in bottom of crock pot.
  2. Lay chicken breast on top of onion
  3. Pour in chicken broth
  4. Pour salsa over top
  5. Cover and cook on low for 6 – 8 hours or high for 4 – 6 hours.
  6. When it’s done, use 2 forks to shred up the chicken and mix it all together.

Boom! That’s it! There is almost zero prep for this meal, which I love. Just chop your onions and dump everything into the crockpot, cover it and go on about your day. Bonus: it’ll make your house smell amazing too!

Extras for this meal

Once the meal is ready these are the extras we like to eat it with

  • Corn tortillas
  • Shredded cheese
  • Lettuce
  • Sour cream
  • Avocado or guacamole

This recipe is for 2 servings. But it’s super easy to make it for more. Add more of everything…meaning if you add more chicken, add more salsa and broth too.
