This recipe is completely gluten free. It makes 4 servings. And it’s all made in one pan. Use your largest, deepest pan. I recently purchased the one below and am in love with it!
Ingredients for one pot chicken and rice gluten free
- 1 lb Chicken breast
- Half an onion, chopped
- 3 carrots, chopped
- Frozen peas (or green beans, or whatever veggie you have on hand)
- 1 cup uncooked, brown rice
- 1 tbsp Olive oil
- 1tsp of thyme
- 1 tsp of rosemary
- 2 1/4 cups of water
- 2 tsp of Better than Bouillon
Instructions
- Prep your chicken. I always find my meat comes out better when I use a meat tenderizer, like the one below. Salt and pepper your chicken breast and use a tenderizer.
- Add olive oil to pan. Brown chicken, both sides. Then remove from pan.
- Add in onions and carrots and toss.
- Dissolve your better than bouillon in water. And add to pan.
- Add peas to pan, bring to a low boil.
- While that cooks chop up your chicken into cubes and add back to pan.
- Add rosemary and thyme
- Add brown rice and stir.
- Cover and lower heat.
- Cook for 35 minutes.
That’s it! Your rice should be cooked just right and your chicken should be juicy and tender.
Sometimes I change up the veggies in this dish so don’t be afraid to experiment a little. You could use a frozen mixed veggie. You could use chopped peppers if you like. The options for this dish are endless.
