Stuffed Peppers gluten free recipe

Stuffed peppers easily make it into my top ten go-to gluten free meals for a number of reasons. They are simple to make, you can make them ahead of time, and they are always full of flavor. Today I want to share my Stuffed Peppers gluten free recipe. Scroll down to see what makes my stuffed peppers so delicious!

I switch it up between 2 versions of stuffed peppers. One uses italian seasonings and the other is a more mexican style. I’ll give you the recipe for both.

Ingredients

  1. 4 green bell peppers
  2. 1 lb. ground meat (I’ve used beef and turkey, both yummy!)
  3. 1/2 an onion, chopped
  4. Brown rice (cook ahead of time to add into meat mixture)
  5. Can of diced tomatoes (if I’m going for a mexican flavor I use the diced tomatoes & green chilies)
  6. Seasonings – 1/2 tbsp of Italian seasoning OR 1 tsp of cumin and 1/2 tsp of chili powder.
  7. 1 cup off broth

Instructions for Gluten Free Stuffed Peppers

  1. Prep your peppers to be stuffed. Cut off the tops and chop them and set aside. Clean out the inside of peppers. Stand them up in a deep baking dish or in a crockpot.
  2. In a deep skillet, brown your meat. If you decide to use ground Turkey use a little non-stick spray. If you are using ground beef, carefully drain the fat once the meat is browned.
  3. Add seasonings, onions and chopped up peppers. Toss well and cook for a few minutes. Until the onion and peppers are soft.
  4. Then add in your diced tomatoes. Bring to a low boil, cook for about 5 minutes stirring occasionally.
  5. Lower heat and mix in rice.
  6. Cover and cook on low/med for 10 minutes.
  7. Add the broth to the bottom of whatever dish you are cooking them in.
  8. If you’re baking set oven to 375°, cover and cook for an hour. Check to see how your peppers are holding up, I like my peppers to almost fall apart (but stay together enough to get them onto my plate 😉)
  9. Cook uncovered for 10 minutes, add cheese if you like.

There are so many variations of stuffed peppers you can make. As long as you use brown rice they are naturally gluten free. If you decide to try different seasonings just be sure to check that they are gluten free.
