Chicken Bacon Ranch – gluten free recipe

When I discovered that Hidden Valley ranch seasoning mix was gluten free it was life changing! It’s a super easy way to spice up your gluten free meals and keep them from being bland. Plus there are tons of ways to use it! Our favorite way to use it is with my Chicken Bacon Ranch gluten free recipe.

Ingredients

  1. Chicken breast
  2. Bacon (I use the crumbles from Costco, it’s real REAL bacon)
  3. Potatoes (cut into small cubes)
  4. Frozen veggies (I use whatever I have on hand…mixed veggies, or corn, or peas and carrots, whatever you like)
  5. 1 cup Chicken Broth
  6. 1 cup Water
  7. 2 tbsp Hidden Valley Ranch
  8. Shredded cheese for topping when you serve it.

Steps for Chicken Bacon Ranch Gluten Free Meal

  1. Heat oven to 400°
  2. Salt and pepper your chicken. Heat a tbsp of oil in a pan. Brown your chicken on both sides. I like to use a meat tenderizer or mallet tool before I cook my chicken (any meat I cook, I use a tenderizer, it really makes a difference. There’s a link below to my favorite). Remove chicken and cut into 1 inch cubes.
  3. Add chicken to baking dish.
  4. Add potatoes, veggies and bacon.
  5. Then add broth, water and ranch seasoning.
  6. Mix it all up.
  7. Cover with foil and cook for 30 minutes.
  8. Remove foil and cook for another 15 minutes. Make sure you potatoes are cooked all the way, they should be but I always check just to be sure.

When I serve this I usually top it with a little shredded cheese. Cheese makes everything better, amiright?!?!
